Heat a little oil in a frying pan over high heat. Add the mushrooms in a single layer and leave for 4-5 minutes without stirring. Add a little salt, mix and leave for another 2 minutes. Add onion and pepper and cook for 5-6 minutes. Add the corn and leave for another 2-3 minutes. Add salt and pepper.
Sprinkle grated cheese or cheese on half of the surface of a tortilla. Place 1/2 of the previously obtained filling and a few slices of Jalapeno on top (Attention! It's very hot!). Cover with grated cheese and bring the other half of the tortilla over, thus covering the filling.
Do the same with the remaining ingredients.
Place the tortilla on a hot grill and cook for 3-4 minutes, until the cheese has melted.
Consume immediately, along with salad.
