We are looking for a recipe for using the remaining "red" eggs. The original name was "Petites Poussins tout juste eclos" in free translation, "just hatched chicks". Sounds like ... like that. Chicken is enough for me. My personal contribution was the addition of the bed of crispy lettuce and ham, so natural, which contrasted with freshness and complemented the eggs. It is a very good idea and by far I prefer it to the eternal eggs stuffed drowned in mayonnaise.
