- For the countertop:
- 4 eggs
- 10 tablespoons sugar
- 500 g creamy yogurt danone
- 12 tablespoons oil
- a pinch of salt
- vanilla and rum essence
- 400 g flour
- 1 sachet of baking powder with saffron
- For the filling:
- 450 g of cottage cheese
- 2 eggs
- 2 tablespoons semolina
- 4 tablespoons sugar
- 1 sachet of vanilla sugar
- 2 tablespoons dehydrated cranberries
- lemon peel
- For decoration:
- 4-5 nectarines or other fruits
Preparation time: less than 60 minutes
RECIPE PREPARATION Cranberry Cake:
In a bowl, beat the eggs together with the sugar and oil. Add the yogurt and in the rain add the flour mixed with the baking powder, the essences and the salt. A thick cake-like composition will come out.
The cheese is mixed separately in a bowl together with the sugar, semolina, eggs, cranberries and lemon peel.
Put baking paper in a tray, add 3/4 of the dough and put it in the oven for 15 minutes. Remove the tray, put the cheese composition and on top arrange the nectarines cut into round slices or smaller pieces. The remaining dough is placed around the fruit with a spoon. Bake again for 20-25 minutes.
