Ingredients for Making Ravioli with Cheese

For the test:

  1. Premium wheat flour 250 g.
  2. Chicken eggs 3 pcs.
  3. Olive oil 1 tbsp
  4. Salt to taste

For filling:

  1. Cheese (Parmesan, Ricotta or other hard cheese) 200 g.
  2. Chicken eggs (yolks) 3 pcs.
  3. Sour cream (any fat content) 1 tbsp.
  4. Nutmeg to taste
  5. Pepper to taste
  6. Parsley to taste

Cooking ravioli with cheese:

Step 1: Knead the dough.

Break into a large bowl 2 eggs, add salt, olive oil, a little (1-2 tbsp) flour and mix thoroughly. Sift the remaining flour through a sieve and pour into another bowl, pour the egg mass and knead until an elastic shiny dough is obtained. Make sure that the dough is homogeneous, without lumps. Kneading the dough, close it with a lid and leave for an hour for softening.

Step 2: Prepare the filling.

Grate the cheese on a coarse grater, mix it with egg yolks, sour cream, salt, parsley and nutmeg.

Step 3: Cooking Ravioli.

We get the approached dough and roll it with a rolling pin in 2 layer of the same thickness. Make sure that the thickness of the dough is moderate, thin dough will be easy to tear, and thick spoil the taste of the dish. On the first layer of dough, spread the filling with a spoon at a distance using a spoon 4-5 cm apart from each other. Using a brush, grease the dough between the filling mixed the egg. Gently place the second layer on top and press it. Cut the dough into squares so that the filling is in the middle. We make sure that the dough is well bonded. Put ravioli in salted boiling water and cook for 7-10 minutes. Ready ravioli should pop up.

Step 4: Serve the ravioli with cheese.
