Cooking dumplings with meat "Poltava":

Step 1: Prepare the filling.

The first step is to boil the meat in salted water. Keep in mind that beef is cooked an order of magnitude longer than pork, so I advise you to put it to cook first. Then we cool, and we pass the meat through a meat grinder. Peel and finely chopped onions, then put them in a frying pan, previously greased with vegetable oil. Fry until golden brown, stirring constantly. Then add minced meat, fry a little, stirring (about 5 minutes), salt, pepper, remove from heat and cool.

Step 2: Cook the dough.

While the filling is cooling, we will take up the preparation of the dough. To do this, beat the egg with kefir in a shallow bowl with a whisk, then add vinegar and corn oil, continue to beat, and then pour two tablespoons of flour and knead. Now add a pinch of salt, soda, and more one tablespoon of flour, carefully knead and spread on a table pre-sprinkled with flour. Our dough turned out to be liquidish, and we have to knead it until it stops sticking to our hands, at the same time, inside it should remain soft and elastic.

Step 3: Cook the dumplings with Poltava meat.

We put a saucepan with water on a medium heat, salt a little. Divide the finished dough into 4 parts, each of which is rolled by hand into a sausage, which in turn is divided by 4 parts. Each part (we have 16 of them) roll out into a circle, in the center of which we spread one teaspoon of the filling and begin to pinch the edges well. In boiling, salt water we spread boiled dumplings (in 6-8 pcs. at once). Cover with a lid. In this case, the water should boil three times, and each time, opening the lid, stir the dumplings so that they do not stick together. We get the dumplings with the help of a slotted spoon and spread the next batch to cook. Grease the prepared dumplings with a piece of butter.

Step 4: Serve the Poltava meat dumplings.

Dumplings with meat served hot and with sour cream. As a side dish, you can cook a light vegetable salad. Enjoy your meal!
