Potato Dumpling Ingredients

For the test:

  1. Kefir (any fat content) 1 cup.
  2. Premium wheat flour 5 cups.
  3. Baking soda 0.5 tsp.
  4. Salt 1 pinch.

For filling:

  1. Potato 8 pieces.
  2. Onion 2 pieces.
  3. Sunflower oil 3 tablespoons.
  4. Butter 10 grams.
  5. Salt 1 pinch.
  6. Ground black pepper 0.5 teaspoon.

Cooking dumplings with potatoes:

Step 1: prepare the potatoes.

Wash potatoes, peel with a knife, wash peeled potatoes under running water under running water. Cut into large pieces with a knife on a cutting board. Put the potatoes in a pan and pour cold water. Salt a little and put on medium heat. Bring the water to a boil, then reduce the fire and cook until tender, about 25 minutes.

Step 2: prepare the onion.

We clean the onions and cut them into cubes with a knife on a cutting board. We heat the pan with vegetable oil and fry the onions over medium heat until golden brown, about 5 minutes. Stir the onion periodically with a spatula.

Step 3: prepare the filling for the dumplings.

From boiled potatoes, drain the water into the sink. Add the butter to it, a third part of the fried onions and knead a crush. Then salt, pepper to taste and mix thoroughly with a spoon. We spread the filling on a plate and leave to cool.

Step 4: prepare the dough.

Kefir room temperature combine with soda and salt and mix thoroughly. Then add the flour half a cup, each time thoroughly mixing with a spoon. After adding all the flour, put the dough on a cutting board for kneading. Knead the dough with your hands until a steep homogeneous mass. Ready dough should be well behind hands.

Step 5: prepare dough pieces for dumplings.

Cut the strip from the dough 2 cm thick and cut it into cubes with a knife on a cutting board. Dip the resulting cubes in flour on both sides of the cut and roll out with a rolling pin.

Step 6: blind the dumplings with potatoes.

We spread the potato filling in the middle of a circle of dough and fasten the edges. We spread the dumplings on a chopping board sprinkled with flour so that they do not stick to the surface. You will get about 25 dumplings. You can freeze dumplings in the freezer and cook them later.

Step 7: cook the dumplings with potatoes.

Pour cold water into the pan, add salt to taste and boil over high heat. Let the dumplings in boiling water, stir with a spatula so that they do not stick to the bottom of the pan. Leave to simmer over medium heat. Remove the pan from the stove after 2-3 minutes after the dumplings surfaced and take them out with a slotted spoon in a bowl. Stir the dumplings with the spoon and the remaining fried onions.

Step 8: serve the dumplings with potatoes.

We spread the dumplings on portioned plates and serve hot with sour cream. Enjoy your meal!

Recipe Tips:
