Grilled corn is a must-have side dish at any summer cookout. Whether you're throwing some juicy burgers, marinated steaks, or maybe even just some chicken on the grill, the party just wouldn't feel the same without a little sweet grilled corn to enjoy with the main event. Like potato salad, macaroni salad, coleslaw, and peach cobbler, it's something that brings back fond memories for many people.

While there's nothing wrong with classic Grilled Corn on the Cob, sometimes, you want something a little different — maybe something with a Mexican twist, like this recipe for Elotes Callejeros (street-style corn) from the chef at La Esquina in New York City. It's slathered with an addictive blend of mayonnaise, cotija cheese, lime juice, and a bit of chile for some heat. Lightly brush the corn on all sides with the garlic-basil butter and season with salt and pepper. Arrange the ears on the grate, sliding a foil grill shield — a folded layer of foil — under the tied-back husks to keep them from burning. Grill the corn until the kernels are darkly browned, rotating the ears every minute or so to ensure the ears cook evenly. You may hear some popcorn-like crackling — cool! Baste the corn with more garlic-basil butter as it grills. Total cooking time will be 8 to 12 minutes.

Transfer the corn to a platter or plates and brush one final time with the garlic-basil butter. Sprinkle the corn on all sides with the grated cheese and dig in.

  1. Heat a grill until hot. While the grill is warming up, bring a pot of water to a boil.
  2. Add the corn and salt. Boil for 5 to 7 minutes, until the corn until slightly tender, but not cooked all the way through.
  3. Drain the corn and transfer to the grill lightly char the kernels.
  4. Mix the mayonnaise and lime juice.
  5. Remove the corn from the grill, paint with a bit of the citrus mayonnaise, then dust with chili powder and Parmesan.

Grilled corn is one of life's simple pleasures, and super easy to do, too. That is, if you have access to an open fire pit or outdoor grill. If you live in an apartment and have little access to outdoor space, let alone the zoning permits to grill your dinner outside, not to worry we have other options for you! 7 Grilled or Smoked Recipes to Make in April

Though the dregs of winter are still in evidence, spring has sprung in most of the country, opening up new seasonal culinary possibilities. You might see ramps in the market—those fabulously pungent wild leeks that grow in eastern woodlands and that are so good when lightly grilled—or foraged fresh morel mushrooms that, when sautéed in butter with a little garlic (or ramps) and a splash of sherry, pair so well with grilled steak. Asparagus (for which we have many recipes, including the one below), fava beans, and artichokes join the party.

Below are several great dishes to celebrate this transitional month.

1. Grilled Sangria

Citrus fruit like oranges and limes are still in season, making this cocktail a refreshing choice for a small party on the patio (or indoors, if temps are still chilly) or after a day of working in the yard. The fruit is halved, dipped in sugar, and caramelized on the grill before being combined with rum, sparkling wine, and fresh mint. 2. Pork Shooters

It’s such an ingenious idea—“shot” glasses constructed from rounds of kielbasa and bacon, then filled with a savory mixture of shrimp, cream cheese, cheddar cheese, and scallions. Hot-smoke for 15 to 20 minutes, then serve to appreciative guests. And be prepared to be asked for the recipe.

3. A New “Egg Salad” with Green Vegetables

This beautiful spring-like salad features hearts of palm (fresh, if you can find them), bright green asparagus, grilled sweet corn, fried eggs, and arugula in an orange-inflected vinaigrette. First featured on Project Fire, Season 2, this salad is a show-stopper.

4. Korean-Style Skirt Steak

Though often the meat of choice for fajitas, skirt steak takes on a Korean persona with a bulgogi-inspired marinade. The steak is briefly grilled, then thinly sliced, rolled in leaf lettuce, and served with a variety of condiments. For an even more Keto-friendly version, substitute granulated monk fruit for the brown sugar in the marinade.

5. Grilled Swordfish Steaks with Golden Raisin Chimichurri

Swordfish steaks frequently appear on the menu in the Raichlen household, and this is one of Steven’s favorite preparations—perfect for busy weeknights or leisurely weekends. While the swordfish steaks marinate in lemon juice and fresh oregano, Steven makes a sweet and savory chimichurri sauce using more fresh herbs and sweet golden raisins. A short sear over a hot fire, and the steaks are ready to serve.

6. Cornell Chicken

You’ve heard the phrase “spring chicken?” This one, a specialty of upstate New York, offers up crackling-crisp skin, moist meat, and an unusual mayonnaise-based barbecue sauce. (The chicken is also basted, as it roasts, with a baste developed by a professor at Cornell University.) As an alternative to the sauce, we suggest Charred Lemon Aioli.

Wonder what to do with all those beautiful fresh berries that show up in the market this time of year? This simple dessert—you can even use Sara Lee pound cake (we recommend it over homemade as it holds up better on the grill)—never fails to wow guests. You can, if you wish, substitute angel food cake for the pound cake.

Different types of grilling

When you grill you get the advantage of so many different types of grilling. They all bring a different dimension to what you are cooking.

Charcoal

You can not get that great charcoal flavor like from a weber grill if you are cooking on your stove in the house.

You are missing out on the taste of burgers and hot dogs cooked on the grill.

Charcoal also gives you the option of grilling low and slow with indirect heat to one side. Think of grilling a great rack of baby back ribs for hours!

Propane

Propane grilling, like on a weber genesis grill, gives you the opportunity to control the heat and how you want to grill.

It is by far the most convenient way to grill. You can fire up a gas grill really quickly and your off to cooking your dinner for the night.

Open fire

This can be an art, trying to keep the flame and temperature in check. When you cook on fire you bring that smokey taste to the meat your grilling.

Different types of wood are going to give you different tastes to the meat. This is one of the most primitive forms of cooking that goes a long way back in history!

Frying pan on the grill

A lot of people don’t realize or think about how you can use your grill just like the stovetop in your home. If you’re using a good quality stainless steel pan or cast iron pan you can use it to cook on your grill with no issues.

This allows you to cook things that you didn’t think you could like eggs or a sauce. You need to think outside the box and consider how it’s a heat source for cooking and not just a way to grill meat.
