Cooking ishkhan in pita bread:

Step 1: Prepare the ingredients.

For cooking, you need to use trout, for other fish there are other recipes. First you need to rinse the fish with running water, and then place it on a cutting board, where with a sharp knife we will clean it of scales. To gut the fish, you need to cut off the head, tail and fins of the carcass. Then make an incision on the belly and remove the insides. We have a very affordable video on trout cutting on our site - here. While we will deal with other ingredients, grate the fish inside and out with salt and black pepper so that it absorbs the aroma of spices. Rinse lemon, onion and herbs with running water to remove settled dust and dirt. Peel the onion and cut into half rings. Shake a bunch of cilantro to remove excess water, and finely chop on a cutting board. We cut the lemon into thin half rings.

Step 2: Stuff the pita with trout.

If you use several small trout carcasses, you can not grind them, but if you have one large trout, you should cut it into small portions. We spread lavash in front of us and proceed! To give the dish a creamy shade, grease pita bread with mayonnaise or sour cream. Closer to the edge of the pita bread we lay out a little filling - onion, lemon and cilantro. With the same ingredients, we stuff the fish and put it on top. We sprinkle the trout with the remnants of the filling so that it is completely surrounded by a kind of “marinade”. All actions are clearly shown in the photo. Gently and slowly, we begin to fold the pita bread with an envelope. Now it remains only to bake it, which we will do in the next step.

Step 3: Bake ishkhan in pita bread.

There are several ways to pre-process a trout and pita bread envelope. You can pre-fry it in a pan, you can wrap it in foil, or you can simply put it in a baking dish and pour it with melted butter. We’ll try the last method. Melt the butter in a bowl or mug over medium heat, stirring occasionally. At the same time we turn on the oven to heat it up to 160 degrees. We put the roll of pita bread with stuffed fish into a baking dish, which we will pre-grease with vegetable oil to prevent burning. Pour the melted butter on top and send to the oven, where the dish will be baked for 30-40 minutes until ready.

Step 4: Serve the finished ishkhan in pita bread.

The finished dish needs to be served hot. Its amazing aroma will call your family for dinner. and a delicate and delicate taste will definitely please even the most demanding gourmets. If you are preparing this dish for a festive table, then before serving it can be decorated with sprigs of greenery and pomegranate grains. Enjoy your meal!
